Stuffed Green Peppers with Brown Rice, Italian Sausage,

  • 1 cup long-grain brown rice (I used Uncle Ben's Brown Rice, but any long-grain rice will work.)
  • 4 green bell pepper (large, bottom trimmed, cap end cut off and diced, and seeds removed)
  • 1 onion (large, diced)
  • 2 tsps olive oil
  • 2 sweet italian sausage (links, about 8 ounces turkey, or other sausage of your choice. Use diced mushrooms instead of sausage for vegetarian version.)
  • 1/2 tsp ground fennel
  • 1/2 tsp oregano (dried Greek or Turkish)
  • 1/2 cup grated parmesan cheese
  • ground black pepper
  • salt
  • 1/4 cup mozzarella cheese (grated)
